Remember all those peaches that you canned up a few months ago? Yes, they are still there sitting in your pantry saying, “Eat Me!” Far too often I feel like I get uncreative with the things that I can year after year and instead of using them in a recipe we just eat them out of the jar. Which, there is nothing wrong with doing that but it sure does get boring sometimes.

So I don’t know if muffins are part of your regular “using up canning peaches” routine, but here is a yummy recipe that could help break up the monotony.

Peach Cobbler Muffins

What you need:

  • 1/2 c. butter, melted
  • 3/4 c. sugar
  • 1 egg
  • 1/2 c. sour cream
  • 1/2 t. vanilla extract
  • 1 1/2 c. flour
  • 1 1/2 t. baking powder
  • 1 c. chopped peaches
  • brown sugar
  • flour
  • butter

Mix together all the ingredients except the peaches.

Mix in the peaches last, you don’t want to smush them all!

Drop the dough into a greased muffin pan or a muffin pan lined with liners.

In a separate bowl mix together about 1/4 c. brown sugar, 1 T melted butter, and 2 T flour.

Sprinkle the brown sugar mixture on top of the muffin dough. Bake at 350F for about 30 minutes or until a toothpick comes out clean.

Yum. These have a very peaches and cream flavor to them and the topping adds a nice little crunch on the top.
